Ingredients:

• 9 Mini Pavlovas 
• 9 Strawberries 
• 200g Thickened Cream 
• 2 tbsp Icing Sugar 
• 1 tsp Vanilla Essence 
• Mint (optional) 

Method:

1. Add 1 tbsp icing sugar and vanilla essence to the thickened cream and whip it.
2. Place the whipped cream into a piping bag or snap lock bag and cut one corner 
3. Assemble the "santas" by placing down the mini pavlovas, piping the middle with whipped cream, adding a strawberry and then a dot of cream on top
4. Add the remaining 1 tbsp of icing sugar to a sieve and sprinkle over the santas 
5. Garnish with fresh mint to add more Christmas colour
