CHRISTMAS LOBSTER ROLLS - CRANBERRY MAYO

Ingredients:
- 1 lobster tail
- 1 tbsp butter
- 2 brioche hot dog buns
- ¼ cup finely chopped celery
- ¼ cup finely chopped spring onions
- 3 sprigs of dill
- 1 tbsp chopped parsley
- Salt & pepper
- ½ lemon
- 1 tbsp mayo
- 2 tsp cranberry sauce
Method:
- Preheat oven to 180 degrees
- Cut lobster tail shell and split in half. Add salt and spread the butter.
- Place lobster in the oven for 12 minutes
- Add the hot dog buns to a pan on high heat and brown on each side for 1-2 minutes
- Meanwhile, finely chop the veg and herbs
- Once the lobster is cooked, combine in a bowl with the celery, spring onions, dill, parsley, salt, pepper, lemon, mayo and cranberry sauce
- Fill the buns with the lobster mayonnaise mixture and top with extra lemon and dill
