CHRISTMAS HASSLEBACK POTATOES

Ingredients:
- 10 white washed potatoes
- 1 tbsp olive oil
- 1 tsp salt
- 1 tsp pepper
- 80g sliced ham
- 80g brie (sliced into strips)
- 10 tsp cranberry sauce
- 2 tbsp roughly chopped parsley
Method:
- Preheat oven to 180 degrees
- Using a deep spoon or chopsticks on either side of the potato, hassleback the potatoes with a sharp knife (see video on socials for instructions)
- Marinade the potatoes with the olive oil, salt and pepper
- Place in the oven on baking paper for 20 minutes
- Remove potatoes from the oven and add the sliced ham and brie into every second/third potato cut
- Place back in the oven for 10 minutes
- Remove potatoes from the oven and top with the cranberry sauce and parsley
