Onion bhajis are like crispy onion cakes; filled with layers of flavour thanks to their delicious Indian-spiced coating.
 
Makes 8
 

Ingredients:

  • 2 large brown onions
  • 3 tbsp finely chopped coriander (saving 1 tbsp for garnish)
  • 2 tsp minced ginger
  • 1 tbsp garam masala
  • 1 tbsp dried coriander
  • 1 tbsp chilli flakes
  • 1 tbsp cumin
  • 1 tbsp salt
  • 1 tbsp garlic powder
  • 1 cup chickpea flour
  • 1 tbsp corn flour
  • 1 tsp baking powder
  • â…” cup of water
  • 1L vegetable oil (for frying)
  • 2 tbsp sweet chilli (for dipping)
 

Method:

  1. Finely slice the onion using a mandolin or or a knife
  2. Place the onions in a bowl and add the coriander, ginger, garam masala, dried coriander, chilli flakes, cumin, salt, garlic powder, chickpea flour, corn flour, baking powder and toss till the onion is fully coated
  3. Slowly pour the water in small batches until the batter is thickened (you may not need all the water)
  4. Shape the onion into 8 even balls using your hands
  5. Bring the oil to frying point on the highest heat and test with a chopstick or fork when it is ready (bubbles will appear around the utensil)
  6. Lower each bahji into the oil using a spoon and cook 4-5 at a time. Remove using the spoon and place on a paper towel to absorb excess oil
  7. Serve with remaining coriander and sweet chilli
