  4. One Pan Thai Salmon Curry Bake
If you’re looking for a quick, healthy and convenient meal for 4 then this one dish thai salmon curry bake is for you. All you need to do is blend the sauce ingredients, and assemble the dish with microwave rice, veggies, salmon, pour the sauce over and cook for 20 minutes. Its so easy and delicious and you can swap the salmon out for any protein of your choice.
 

Ingredients:

  • 4 portions of salmon 
  • 1 can of coconut milk
  • 2 heaped teaspoons green curry paste 
  • 1 handful of coriander 
  • ½ lime juiced
  • 250g microwave brown rice 
  • ½ red capsicum 
  • 1 carrot 
  • 1 broccolini bunch 
  • ¼ cup chopped spring onions 
  • 1 chilli finely sliced 
  • 1 lime finely sliced 
 

Method:

  1. Preheat oven to 200 degrees
  2. Prep your veggies by slicing the capsicum, carrot, spring onions, chilli and the broccolinni into halves if the stalks are too thick
  3. Place the coconut milk, curry paste, coriander and lime juice in a blender or food processor. Blend until there are no chunks 
  4. Assemble the dish with the brown rice (non microwaved), veggies, salmon and pour the sauce on top. Lay the lime wedges, spring onions and chilli on top then cover with foil and bake in the oven for 20 minutes 
  5. Remove from the oven and serve with fresh coriander
