Ingredients
- ½ red onion
- 2 cloves garlic
- 50g butter
- 300g mushrooms (sliced)
- 1 tsp spices each: oregano, garlic powder, paprika, chilli flakes, thyme, salt & pepper
- 500ml chicken stock
- 300ml thickened cream
- 60g loose leaf spinach
- Deli tub of semidried tomatoes (135g)
- 1 packet gnocchi (500g)
- 60 grated parmesan
- Basil leaves (optional garnish)
- Chilli flakes (optional garnish)
Method
- Finely slice the red onion and chip the garlic
- Add the butter to a cast iron pan or large pot on medium heat. Add the garlic and the onion and cook for 5 minutes until fragrant. Add the mushrooms and cover for 5-10 minutes or until mushrooms are wilted down
- Add the spices, semi dried tomatoes, stock and cream. Stir for 5 minutes or until slightly reduced
- Add the spinach and gnocchi and stir for 5 mins (read packet instructions for gnocchi cook time).
- Remove from the heat and top with parmesan, basil and chilli flakes
