Impress her this Mother’s Day with a tasty homemade brekky.  We’ve put together a list of easy brekky ideas she’s sure to love including Vibrant Vege Toast, Fruity French Toast, Açaí Smoothie Bowl, Berry Nice Brekky Jars & The Perfect Pancake Stack. 

Stock up on all your ingredients at Aldi, Coles, Woolworths & Bakers Delight.




2 slices of bread
Beetroot Dip
½ Avocado
3 x Cherry Tomatoes, halved
Rocket, to garnish
Salt & Pepper, to season 

1.Toast the bread and place on a serving plate
2.Spread the beetroot dip over both slices
3.Slice the avocado into vertical stripes and splay half on each slice
4.Place the Cherry Tomato halves, and garnish with a few pieces of Rocket
5.Season with Salt & Pepper
6.Serve it to the lucky mum in your life and make her day!  



Açaí Puree (try Gourmet Organic Açaí Puree from Coles or Woolworths)
Liquid: ¼ - ½ cup of Coconut Water, Water, Apple Juice or Non-Dairy Milk
Fruit: Your choice of Banana, Strawberries, Blackberries, Goji Berries
Crunch: Your choice Nuts, Coconut, Granola
Superfood: Your choice of Chia Seeds, Hemp Seeds, Flax Seeds

1.Break up frozen Açaí Puree into a blender, add a portion of your fruit selection (some banana, berries and blend with your choice of liquid (add a small amount of liquid at a time until your reach the perfect consistency for your base).
2.Pour the Açaí mix into a bowl
3.Garnish with your choice of Fruit, Crunch & Superfood ingredients
4.Serve it to the lucky mum in your life and make her day!

Açaí is pronounced: ah-sah-EE



1-2 tablespoons of teaspoon of butter for frying
1 egg
1 teaspoon of vanilla essence
½ teaspoon of ground cinnamon
¼ cup milk
3 slices of thick white bread
Maple syrup, to serve
¼ cup of blueberries
1 banana, chopped

1.Beat the egg, vanilla essence and cinnamon in shallow dish, then stir in the milk.
2.Dip bread in egg mixture, turning to coat both sides evenly.
3.Melt butter in a frying pan over a medium-high heat.
4.Cook bread slices until golden on both sides, add extra butter if needed.
5.Transfer cooked toast to a serving plate.
6.Layer the 3 pieces of toast with the banana and blueberries, then drizzle over the maple syrup.
7.Serve it to the lucky mum in your life and make her day! 



Make mum a delicious little jar of goodness this mother’s day with her favourite cereal, yoghurt & fresh fruit.

Cereal: Granola, oats or her favourite cereal
Yoghurt: Plain or fruit yoghurt
Fruit: Berries or sliced banana
Garnish: Sesame seeds, cinnamon or chocolate

1.Layer your choice of cereal and yoghurt in the jar
2.Add your selection of fruit to the top
3.Garnish with sesame seeds, cinnamon, or shaved chocolate if she has a sweet tooth!
4.Serve it to the lucky mum in your life and make her day!  



1 ½ cups plain flour
2 tablespoons sugar
2 teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt
1 ½ cups milk
2 eggs
1 teaspoon vanilla
Butter, to cook & serve
Maple syrup, to serve 

1.Stir the flour, sugar, baking powder, baking soda and salt in a large bowl
2.Mix the milk, eggs and vanilla in a small bowl
3.Create a well in the dry ingredients and pour in the egg mixture, while whisking with a fork
4.Heat a frying pan with some butter and pour in ¼ cup batter per pancake
5.When the batter starts to bubble, flip the pancake and cook on the other side.
6.Cook both sides until golden brown.
7.Make a pancake stack on a plate, garnish with butter and drizzle with maple syrup.
8.Serve it to the lucky mum in your life and make her day!
