Simple slow cooked meals for busy families

Quality of life is achievable with good health. Health requires planning and time. Time is hard to find!
 
Here’s our advice on how to get a healthy dinner on the table, without spending a fortune or too much of your precious time.  Make sure you check out our Slow Cooker Chilli Con Carne recipe below!
 
Now let’s talk about the perks of slow cooking...  


1. IT'S EASY
Seriously easy. Chuck it in. Set and forget! You can throw in a pork shoulder (or chicken or beef), chicken stock and BBQ sauce, set it to low for 8 hours and forget about it! Come home, shred with two forks and hey presto, some freezer friendly pulled meat that can be served on a bun, with veggies, over rice, pasta etc… the options are endless.


 


2. IT'S TASTY 
Slow cooking is a great way to bring out flavours in food. There is a reason that recipes suggest cooking your aromatic ingredients (spices, onion, garlic etc.) over a higher heat before the slow cooking commences. It allows flavour to develop, packing some extra punch to your dish.





3. IT’S INEXPENSIVE 
That’s what we like to hear! Slow cookers use less electricity than an oven. They also make it easier to cook bulk meals that you can freeze for later. Larger volumes of ingredients often cost less per unit.
 
Sure, you might get sick of a month’s worth of Irish Stew, but if you cook one slow cooker meal every week and freeze a few portions, you’ll have a stash of tasty meals ready to defrost for lazy nights in. All you’ll have to worry about is freezer space. 
 
Slow cookers are also brilliant at making inexpensive cuts of meat tender.


 
 
HANDY TIPS
• Brown meat and veggies before adding them to the slow cooker for amazing flavour
• Don’t add too much liquid. Stick to the recommended proportions
• Don’t add veggies too early. Adding them before the recommended stage will result in mush
• Don’t keep checking it… let it ‘do its thang’ so the heat is maintained. 
 
Importantly, less time cooking means more time for the important things like family.

Here’s one of our favourite family recipes.
 
Slow Cooker Chilli Con Carne
Serves 8
Cost per serve: Approx. $5


 
Ingredients:
- 1 tbsp olive oil
- 1 large brown onion, finely diced
- 2 red capsicums, finely diced
- 1 green capsicum, diced finely
- 2 garlic cloves, minced
- 750g lean beef mince
- 2 x 400g tins of diced tomatoes
- 400g tin red kidney beans
- 1 cup grated carrot
- 1 cup chopped spinach
- 3 tbsp tomato paste
- 3 tsp (or 3 cubes) beef stock
- 1 tsp red chilli flakes
- 2 tsp paprika
- 2 tsp cumin
- steamed brown rice (to serve)
- light natural yoghurt (to serve)
- sliced avocado (to serve)
 
Method:
1. Add olive oil to your slow cooker, set to sear and heat for 2 minutes.
2. Add diced onion, capsicum and minced garlic, stirring until soft.
3. Add beef mince, stock, chilli, paprika and cumin, breaking the mince up and cooking until browned.
4. Add tomato paste and diced tomatoes.
5. Mix in the kidney beans, carrot and spinach.
6. Cook on low for 4 hours or high for 8 hours.
7. Serve in a bowl over brown rice or pasta, topping with a dollop of yoghurt and sliced avocado.
